Vegetable Tortilla Soup


You can use as much canned/frozen or as much fresh ingredients as you like, depending on your time frame. Adjust quantities to your liking or the size group you're feeding.

Chop & Saute:
-----------------
1 zucchini
1 yellow squash
1 red bell pepper
1 green bell pepper
1/2 yellow onion
2 cloves garlic (or less if you like)

Add above to large soup pot

Add to Pot:
------------------
2 large cans enchilada sauce
2 cans chicken broth
1 can fire roasted diced tomatoes
1 can corn
1 can black beans
1 can pinto beans
1 can sliced olives
1 cup salsa, medium
tortilla chips or tortillas, torn or sliced

Bring to a low boil, then simmer on low for about 30 minutes. Serve with a little sour cream on top if you like. I like to add the Santa Fe Tortilla Strips found in the produce dept. to the top.
Add chicken and make it even hardier. Enjoy! Stay tuned for another recipe using these leftovers!

Folsom Gourd & Arts Festival '09


I am getting ready for the upcoming Folsom Gourd & Arts Festival! The event is held at Folsom City Park, September 26-27. Click on the link above for more information!

This will be my first year attending this event and I'm working hard to make it successful! Carrot Creek will be presenting it's floral design line "fun K designs" featuring beautiful floral works of art created by Elizabeth Krohn. I wanted to incorporate her topiaries and wreaths into Carrot Creek Boutique because they add texture and a sense of nature that I strive to achieve in my paintings. Her designs compliment my art perfectly! I am happy to display them all over my home and now to offer them to you.

I am framing several pieces of art for sale and also offering unframed prints. Of course I will have note cards to purchase as well as special "holiday" packages you can send to loved ones over the upcoming holidays. So "hop" on by and say hello! We'll see you there!

At the Dog Park


Just wanted to share this adorable picture of a frequent visitor to our local dog park. His name is "Cooper" and he is a blue-eyed weenie dog. I did not add craft-store googly-eyes to the picture!
